The Bare Winemakers celebrates wines made in a ‘less is more’ fashion by artisan winemakers from celebrated South Australian regions including the McLaren Vale, Adelaide Hills’ and the Limestone Coast. Winemaking: Sourced from a 23yr old single vineyard located in the Adelaide Hills. The Vineyard is planted to low yielding Bernard 95 and 96 clones as well as I10V1. Hand picked, whole bunch pressed, with only free run juice taken for this wine. Pressed straight to oak where it was fermented on full solids. This wine spent 3 months on yeast lees and six months in large format old French oak barrels Tasting Note: Cool Climate Chardonnay with aromatics of white stone fruits and grapefruit peel. The ancient soils and moderate climate create rich and full bodied wines that are incredibly satisfying. Few that experience the lifestyle of food and wine could argue that it is not better a bleeding heart than none at all. Winemaking: Fruit is harvested during the early morning hours to retain freshness and partially whole bunch pressed. The fruit is kept separate before a fast and precise vinification in stainless steel with minimal oxygen contact, maximising fruit expression and aromatics. A cool fermentation (15 to 18 degrees) is undertaken in stainless steel tanks before maturation on lees for four months. A portion of the Adelaide Hills fruit is aged in two and three year old French oak to increase complexity and mouthfeel. Vintage 2021: Some early rainfall some vineyards, lowering volumes but in generalthe Limestone Coast had a relatively successful vintage in 2021. The naturally cooler vineyards picked later and benefitted from the conditions moderating as well as a well-timed rain event re-vitalising the vineyards prior to vintage. There were good yields of well-balanced fruit with great intensity of flavour. Tasting Note: Pale yellow in colour with green hints. The nose is unadulterated Chardonnay – classically expressive of stone fruit, lemon and cut apple. Cowpunk features wines which are vegan, preservative free, and source the best quality fruit, naturally. Winemaking: Sourced from an established single vineyard site located just south of the Margaret River township. Handpicked, whole bunch pressed, with only free run juice taken for this wine. Pressed straight to second-use oak where it was fermented on full solids. This wine spent three months on yeast lees with intermittent stirring and a further 3 months in a combination of larger oak and steel tank prior to blending. Vintage 2024: Margaret River had an early, fast-paced harvest with ideal conditions for high-quality Chardonnay. A warm, dry growing season led to lower yields but produced exceptionally concentrated fruit with bright natural acidity. Chardonnay was picked early to preserve freshness and purity, resulting in wines that are vibrant, textural, and finely balanced—a standout year for this flagship white variety. Vintage 2023: The wider region was looking at being three to four weeks behind at vintage time due to cooler weather, but sunny periods throughout February and March that were much drier than December and January resulted in very good quality grapes for both red and white across the board. Tasting Note: This is a vibrant and fruit driven style full of energy and refreshment. There is a great juxtaposition between fresh and bruised apples, hints of yeasty complexity and a dry finish that is full of vivacity. Created to deliver full bodied and mouth-filling wines, Elephant in the Room gives consumers what they want- quality, flavour and something to talk about. Each wine is sourced from slow-ripening cool climate vineyards and partially matured in French Oak before final blending and bottling by Corey Ryan. Winemaking: Picked partially by hand. The majority of the blend was vinified in stainless steel with high solids and oxidative handling with fifteen barrel fermented with lees stirring. A small component of the blend is cool distilled whilst another undergoes ultra-membrane filtration. With very gentle handling, these components are masterfully blending back into the original parcel of wine to arrive at a well-integrated, lighter finished ABV. The wine post fermentation & blending spends the following three months maturing in stainless steel and 20% in second-use oak before bottling. Vintage 2023: The winter and spring prior to the 2023 vintage was generally a little wetter and cooler than what is usual, delaying the start of vintage and meaning some extra care was required through the growing period. Whilst the vintage was indeed later than usual, there were some really beautiful parcels of fruit that benefited from being grown in sites where the slower ripening simply enabled flavour ripeness to be achieved with character & balance. Tasting Note: Soft yellow in appearance with an aromatic nose of stone fruit and citrus with notes of creamy vanillin oak. Winemaking: Partially hand before de-stemming and fermentation in a combination of two tonne open fermenters with ten percent whole bunch and twice daily hand plunging and larger closed fermenters with pump overs. All components blended post fermentation before three quarters were matured in stainless steel and one quarter was matured in French oak for four months before bottling with minimal fining, filtration and sulphur addition. Vintage 2021: Early rainfall in some vineyards saw a lowering of volumes but in general the Limestone Coast had a relatively successful vintage in 2021. The naturally cooler vineyards were picked later and benefitted from the conditions moderating. A well-timed rain event prior to vintage re-vitalised the vineyards and saw some good yields of well-balanced fruit with great intensity of flavour. Summary: The Farm Hand wines are grown by the Grigoriou family, fourth generation wine growers, from almost one hundred acres of Organic Vineyards in the Monash Valley of South Australia.
Vineyards: The moderate, dry climate with very low rainfall during autumn and fertile soils is perfect suited to Organic Viticulture. The well established vines (up to thirty years of age) are planted widely apart for airflow to minimise disease pressure and minimal drip irrigation ensures low yielding fruit with rich flavours and varietal expressiveness Winemaking: Fruit is harvested during the early morning hours to retain freshness and partially whole bunch pressed. A fast and precise vinification in stainless steel with minimal oxygen contact maximises fruit expression and aromatics. A cool fermentation (15 to 18 degrees) is undertaken in stainless steel tanks before maturation on lees for four months. 2024 Vintage: A cooler than average growing season, frost, the lack of rain and poor weather during flowering including strong winds throughout November and December resulted in lower yields however, the dry and consistent weather during picking resulted in a vintage of high-quality fruit. Hand-crafted and made with minimal additions and preservatives, these are wines made of the vineyard. The grapes are picked at optimal ripeness, minimally handled in the winery and fruit vibrancy is not hidden by non-essential artefact. Seeking first and foremost fruit expression, drinkability and to be a great accompaniment to food. Don’t let the size fool you, these are wines you’ll want to drink. Vintage 2022: Another good vintage in the Vale. There was an abundance of rain in winter, allowing the vines to grow a good canopy followed by a cool, dry summer which ensured even ripening. The results show great quality fruit with moderate yields.
Tasting Note: Made with pure biodynamic grapes this is a refreshing sparkling style wine that is the perfect for your next picnic in the park. Region: South Australia Grape Variety: Chardonnay Winemaker: Corey Ryan Alcohol: 15% Brand Summary: Mullet wines deliver bolder ripe fruit flavours up front with a bigger body and mouthfeel driving a big, long finish. Or like any great mullet, it’s business at the front, party at the back. Hand-crafted and purpose built, these are wines doing all they can to be big on flavour and big on drinkability. Mullet wines putting good times and enjoyment above all else! Winemaking: Selected parcels of the vineyard displaying bigger, riper fruit flavour are handpicked purposely for the blend. Harvested early in the morning to ensure freshness is retained before whole bunch pressing and a cool fermentation in stainless steel. Time spent in French Oak barriques to build further weight and richness into the wine. Intermittent stirring has helps build weight and soften the edges to deliver a full-throttle Chardonnay. Bottled with minimal fuss and minimal handling. Vintage 2024: A brilliant vintage for Mullet wines. An early cold period leading to a mild temperature growing season ensured full and even ripeness was achieved across red and white varieties alike. Yields were down, but flavours were bold. These big riper flavours arrived in the berry later in the season allowing for picking at higher Baume resulting in above average ABV. Tasting Note: Bold ripe stonefruit with light citrus flavours, plus almond, dough and subtle dark spice leap from the glass. Vintage 2021: If 2020 was all about the heat, then 2021 will be remembered as the wet season. In many parts of Australia, it was unseasonably wet in winter, but not at critical times to do damage nor impact the resultant ripeness of the grapes. A cool and dry summer meant even ripening was achieved between dry and rainy spells and the ensuing fruit quality was excellent and for once yields were up making for a bumper harvest in 2021. Tasting Note: A bold and bright Chardonnay that exhibits varietal flavours of stonefruit and white peach with a vanilla oak influence. Region: HAWKE’S BAY | ROY’S HILL Grape Variety: 100% Chardonnay Winemaker: Corey Ryan and Mike Farrugia Alcohol: 13.8% Summary: Red Hut is a collaboration between longtime friends and wine professionals Corey Ryan and Mike Farrugia, inspired by New Zealand’s iconic backcountry huts that offer shelter and connection. Drawing on deep industry ties, they source small parcels from standout subregions to craft contemporary wines with authenticity and character—wines that capture the real New Zealand, both in the glass and in the heart. Winemaking: Fruit from two select Roy’s Hill vineyards was hand-harvested, chilled, and whole-bunch pressed into French oak barriques, 35% new. Natural fermentation occurred as the juice warmed, followed by 11 months of barrel maturation with lees stirring for two months. Minimal sulphur was added, and the wine was cold and heat stabilised before blending and bottling, with no further additions. Vintage 2024: The 2024 vintage was outstanding for Chardonnay, marked by cooler, wetter spring conditions that reduced yields but concentrated fruit flavours. A warm, dry summer with low humidity and well-drained soils supported steady ripening and vibrant acidity. Cooler nights enhanced aromatic intensity, resulting in elegant Chardonnays with bright citrus and stone fruit notes, balanced oak influence, and a long, mineral-driven finish, showcasing Roy’s Hill’s excellence for premium Chardonnay. Tasting Note: This Chardonnay showcases aromas of white peach, citrus blossom, and roasted cashew, leading to a textured palate of ripe stone fruit, gentle oak spice, and flinty minerality. More about Tread Softly Find a stockist Grape Variety: Chardonnay Summary: Crafted for the conscious consumer, Tread Softly is certified sustainable, made with modern vineyard and water management techniques to minimise environmental impact. It is bottled in sustainable, lightweight glass and the wine styles are balanced, medium weighted and naturally lighter in alcohol. Since 2019, the brand has planted a tree for every case sold in efforts to reduce their carbon footprint and to date, has planted 2.6 million trees in the ‘Tread Softly Forest’ (and counting)…. Winemaking: Harvested in the cool of the morning to avoid the warmer temperatures of the day. The fruit is quickly delivered to the winery for destemming and crushing prior to a regular fermentation in stainless steel tank. The wine is aerated and temp controlled for an even ferment and then spends 3 months in tank on solids prior to bottling and an early release. 2025 Vintage: The 2025 vintage was marked by a fast, hot, and compressed season, with early harvesting driven by persistent heat and low rainfall. Despite challenging conditions, quality was exceptional—reds showing depth, structure, and intensity, and whites delivering freshness and vibrancy. Region: Yarra Valley Winemaker: Tim Shand Closure: Cork Alcohol: 13% Pack Size: 6 Bottle Pack Summary: Wild Folk - the natural choice in wine - are pure expressions of the variety and the vineyard. Minimal intervention in the winery ensures a joyful glass of just what mother nature intended. Wild yeast fermented, no additions, vegan Friendly, preservative free, unfined and unfiltered nothing but fermented grapes at their finest. Winemaking: A less is more regime in the vineyard and the winery has resulted in a fresher more uncompromising wine stylistically. The 2022 is crushed and hard pressed, then wild fermented on oak with full solids. Stirred fortnightly until bottling in July. Vintage 2023: A cooler and wetter spring slowed the start of vintage in 2023. Coolness was a signature of the year putting some pressure on many vineyards and yields. The individual site for Wild Folk wines here in the Yarra valley needed to take precautions and act decisively during the growing period to ensure disease pressure was well-managed and berries could achieve full flavour and phenolic ripeness. The resultant wines from these very best sites are bright and flavour-filled & will drink superbly in their youth. Tasting Note: Yarra Chardonnay goes natural, made with premium fruit and integrated older oak. Vibrant nose with citrus, apple, and biscuit notes complemented by subtle cashew and grilled nuts.
