Winemaking: Hand Picked Pinot Noir grapes from the cool climate region of Tumbarrumba. The fruit was fermented with 10% whole bunches on the bottom of the remaining crushed fruit to achieve aromatic lift and perfume. The fermentation was temperature controlled over a 10 day period with gently punch downs and pump overs twice daily to manage extraction of colour and tannins. The wine was lightly pressed and kept in tank to undergo Malolactic fermentation. Made without the use of preservatives or additions. Vegan Friendly, Preservative free. Made to enjoy!

Vintage 2022: The second of the consecutive La Nina seasons brought difficult conditions with isolated hail storms and late frosts. The season continued in providing a mild spring and summer. The cooler than average weather during harvest resulted in a longer ripening period which facilitated fragrant and elegant fruits in red wines and a seamless acid and tannin balance.

Tasting Note: Beautifully perfumed aromatics combine with mulberry and ripe strawberry fruits. The palate is bright and lively with vibrant fruit and texture. Mulberry and red currants dance across the palate and a lively acidity contributes length. Made without a heavy hand in the winery, reflective of when and where the fruit was grown. No Preservative and No additions. Pair with beef bourguignon and parmesan mashed potato

Winemaking: Prosecco made without the use of additions or preservatives. Picked early and lightly pressed to avoid phenolics in the wine. The grapes were hand picked in the cool of the morning to avoid the warm summer sun. Whole bunch pressed and only the free run juice taken to avoid phenolics in the final wine. Fermented at low temperatures to maintain delicate aromatics, stored on lees for 3 months after ferment to build some fine texture and complexity in to the base wine.

Vintage 2022: The 2022 vintage was the second of the La Nina vintages, Yields were up and vigour was high, a great season for fruit and canopy balance. The shaded canopies played a part in maintaining high natural acids, along with the mild summer and longer ripening period. An excellent season for allowing prosecco to get full fruit ripeness of flavour whilst also maintaining perfect chemistry for sparkling base.

Tasting Note: Crisp nashi pear and floral aromatics, the palate is lively with green apple, honey dew melon and white peaches. crisp and fresh finish, refreshing and fun! A drier style of prosecco with loads of flavour.

Winemaking: Hand Picked Shiraz grapes sustainably grown in the town of Canowindra and made without the use of preservatives or a heavy hand from the winemaker. The fruit was destemmed and crushed before transferring to stainless steel tanks for fermentation. Gentle pump overs twice daily ensure colour and tannins are extracted without over working the fruit. The wine undergoes Malolactic fermentation in tank and is kept on MLF lees for an extended period of time to soften the wine. Made without the use of preservatives or additions. Vegan Friendly, Preservative free. Made to enjoy!

Vintage 2022: The 2022 vintage in the Central Ranges was cooler than average and approximately 2 weeks later than the usual harvest periods. This facilitated a long and slow ripening period resulting in red wines with great flavour and aromatic vibrance as well as a fine acid and tannin balance! A characteristic of the 2022 season is beautifully perfumed reds with full flavours.

Tasting Note: Vibrant aromatics of raspberry liquorice and red cherry jump out of the glass. The palate is packed with plum and red currant fruits with a generous backbone of grippy savoury tannins. A fun and vibrant expression of Shiraz with structure and complexity. Made without the use of preservatives or additions allowing the fruit to shine through and a celebration of tannins in young red wines!

Summary: Of the many dark stories from these troubled times none is more notorious than that of convict Francis Morgan, who was executed on Pinchgut island and his skeleton then left to hang for four years. According to folklore, knowing his fate, Morgan told the hangman he was consoled by what would be his magnificent view of the harbour. Today we’re still obsessed with rum but “harbour views to die for” luckily has quite a different meaning

Tasting Note: Rich and indulgent, this chocolate-infused Tawny harmonises velvety milk chocolate, toffee, and vanilla with the deep, barrel-aged complexity of the wine. Enticing aromas of creamy cocoa, toasted hazelnut, and caramelized sugar rise from the glass, leading into a smooth, full-bodied palate. Each sip reveals layers of milk chocolate truffle, buttery toffee, and oak laced with a hint of rum, offering depth and warmth. The finish is long and lingering, leaving behind delicate notes of cocoa, caramel, and roasted almond.

Tasting Note: A bold twist on the dark-hearted Pinchgut, this cinnamon-infused spiced rum ignites the senses with intensity, warmth, and intrigue. Aromas of cinnamon sticks, clove, and burnt orange rise from the glass, layered with rich vanilla and caramelised brown sugar. The palate is full and refined, revealing waves of maple, toffee, and nutmeg, all carried by the fiery warmth of cinnamon spice. Mid-palate complexity deepens with oak char and dried fruit, leading to a long, smouldering finish of dark treacle, toasted vanilla, and lingering spice. A fiery indulgence with a bold edge.

Summary: The Hero wines are hand-crafted from the best quality fruit sourced from premium vineyards across South Australia, including McLaren Vale and the Barossa. With meticulous handling in the vineyard and winery, the pristine fruit will have less exposure to anything harmful that may normally require the addition of preservatives. Our wines are crafted to be brightly coloured, exotically fragrant, full-flavoured and critically, they sing without the addition of preservatives. Perfectly suited to many cuisines, these wines are also crafted to ensure they are suitable for Vegans. 

Winemaking: Made without the use of any preservatives. Hand picked over night during cool temperatures to preserve delicate fruit characters. Pressed directly off skins and fermented in stainless steel tanks with temperature control. A long cool ferment for approximately 10 days. The wine was left on yeast lees for two months before bottling early to maintain freshness.

Vintage 2023: Early cool weather and some rain early spring has set the region up well for the warmer than usual period running up to harvest time. The wines show terrific colour and phenolic ripeness and a fine natural acidity delivered in 2023. 

Tasting Note: Crisp nashi pear and white floral aromatics. The palate is crisp with lemon peel, green apple and honeysuckle flavours followed by a saline minerality that leaves you wanting more! Pair with grilled snapper fillets and a squeeze of lemon! 

Winemaking: Healthy and problem free fruit is selected in the vineyard  and then picked in the cool of the night and then rushed to the nearby winery for a fast and focused vinification. Fermentation is cool in a closed static fermenter before a short maturation on lees and bottling. 
 
2023 Vintage: The winter and spring prior to the 2023 vintage was generally a little wetter and cooler than what is usual, delaying the start of vintage and meaning some extra care was required through the growing period. Whilst the vintage was indeed later than usual, there were some really beautiful parcels of fruit that benefited from being grown in sites where the slower ripening simply enabled flavour ripeness to be achieved with character & balance.

Tasting Note: Light in colour, this is a soft Pinot Noir with raspberry, cherry, mixed spices, and a subtle earthy note. There's real Pinot Noir character evident making it very flavoursome and moreish. Dark fruited with soft tannins and perfect on its own or with food, particularly less gamey type meats and spring vegetables.

Tasting Note: Dark garnet in colour displaying attractive red fruit aromatics with a pronounced raspberry note showing earthy and gentle spice notes. This is a fresh easy drinking style bottled immediately to capture the essence of the variety. On the palate it's bright with fruit purity showing a good intensity and balanced by cleansing acids. Pair with medium rare steaks and crispy potatoes
