Winemaking: Hand Picked Pinot Noir grapes from the cool climate region of Tumbarrumba. The fruit was fermented with 10% whole bunches on the bottom of the remaining crushed fruit to achieve aromatic lift and perfume. The fermentation was temperature controlled over a 10 day period with gently punch downs and pump overs twice daily to manage extraction of colour and tannins. The wine was lightly pressed and kept in tank to undergo Malolactic fermentation. Made without the use of preservatives or additions. Vegan Friendly, Preservative free. Made to enjoy! Vintage 2022: The second of the consecutive La Nina seasons brought difficult conditions with isolated hail storms and late frosts. The season continued in providing a mild spring and summer. The cooler than average weather during harvest resulted in a longer ripening period which facilitated fragrant and elegant fruits in red wines and a seamless acid and tannin balance. Tasting Note: Beautifully perfumed aromatics combine with mulberry and ripe strawberry fruits. The palate is bright and lively with vibrant fruit and texture. Mulberry and red currants dance across the palate and a lively acidity contributes length. Made without a heavy hand in the winery, reflective of when and where the fruit was grown. Winemaking: Prosecco made without the use of additions or preservatives. Picked early and lightly pressed to avoid phenolics in the wine. The grapes were hand picked in the cool of the morning to avoid the warm summer sun. Whole bunch pressed and only the free run juice taken to avoid phenolics in the final wine. Fermented at low temperatures to maintain delicate aromatics, stored on lees for 3 months after ferment to build some fine texture and complexity in to the base wine. Vintage 2022: The 2022 vintage was the second of the La Nina vintages, Yields were up and vigour was high, a great season for fruit and canopy balance. The shaded canopies played a part in maintaining high natural acids, along with the mild summer and longer ripening period. An excellent season for allowing prosecco to get full fruit ripeness of flavour whilst also maintaining perfect chemistry for sparkling base. Winemaking: Hand Picked Shiraz grapes sustainably grown in the town of Canowindra and made without the use of preservatives or a heavy hand from the winemaker. The fruit was destemmed and crushed before transferring to stainless steel tanks for fermentation. Gentle pump overs twice daily ensure colour and tannins are extracted without over working the fruit. The wine undergoes Malolactic fermentation in tank and is kept on MLF lees for an extended period of time to soften the wine. Made without the use of preservatives or additions. Vegan Friendly, Preservative free. Made to enjoy! Vintage 2022: The 2022 vintage in the Central Ranges was cooler than average and approximately 2 weeks later than the usual harvest periods. This facilitated a long and slow ripening period resulting in red wines with great flavour and aromatic vibrance as well as a fine acid and tannin balance! A characteristic of the 2022 season is beautifully perfumed reds with full flavours. Tasting Note: Vibrant aromatics of raspberry liquorice and red cherry jump out of the glass. Summary: Organically grown, no additives, vegan and moderate in alcohol 'Fuzzy Bare' is the new kid on the block- fizzy, fun and ready to drink! Despite being the newest hottest kid on the block, piquette dates to ancient Greek and Roman times. It enjoyed a renaissance in the 19th century when phylloxera decimated French vineyards, making grapes so scarce every ounce of the precious fruit was used. Made from adding water to bare pressed grape skins and left to ferment, this low-alcohol, refreshing, and slightly fizzy drink Was named ‘piquette’ (prickle) and became the standard for vineyard workers at the lunch table. Winemaking: Made using the left over skins that have been pressed off from Slinky Bare and CowPunk wines. Water is added to the press where it is left for 12 hours to interact with the skins. 2023 Vintage: Spring was cooler than usual and with more rain events bringing soil moisture levels up. Summer likewise was cool yet with enough sunny days to enable beautiful albeit slower ripening. 2023 Vintage:The winter and spring prior to the 2023 vintage was generally a little wetter and cooler than what is usual, delaying the start of vintage and meaning some extra care was required through the growing period. Whilst the vintage was indeed later than usual, there were some really beautiful parcels of fruit that benefited from being grown in sites where the slower ripening simply enabled flavour ripeness to be achieved with character & balance.
Tasting Note: Dark garnet in colour displaying attractive red fruit aromatics with a pronounced raspberry note showing earthy and gentle spice notes. This is a fresh easy drinking style bottled immediately to capture the essence of the variety. On the palate it's bright with fruit purity showing a good intensity and balanced by cleansing acids.
