According to folklore, knowing his fate, Morgan told the hangman he was consoled by what would be his magnificent view of the harbour. Today we’re still obsessed with rum but “harbour views to die for” luckily has quite a different meaning Tasting Note: Rich and indulgent, this chocolate-infused Tawny harmonises velvety milk chocolate, toffee, and vanilla with the deep, barrel-aged complexity of the wine. Enticing aromas of creamy cocoa, toasted hazelnut, and caramelized sugar rise from the glass, leading into a smooth, full-bodied palate. Region: South Australia Summary: Sweet Caroline wines are thoughtfully crafted for an easy-drinking and sophisticated wine experience. These are a refreshing range of wines entirely for those of us who love the softer, light and fruity taste of wine. Each variety is a pure and classic expression showing bright, elegant and gentle sweet fruit flavour that finishes light, soft and very long. You ‘ll know even before you take your first sip, Sweet Caroline is just what you’ve been looking for! Winemaking: Seeking bright sweet-fruited berries in a well-established sunshine laden vineyard. Parcel selection in the vineyard has enabled all hand-picking before being transferred to the winery for whole bunch pressing into 100% stainless steel for fermentation. The wine is cool fermented and ceased just prior to dryness. The wine spends a short time on lees to soften the mouthfeel and build a little weight and flavour complexity before being bottled. Vintage 2024: Is a wonderful vintage to craft Sweet Caroline wines. An early cold period leading to a mild temperature growing season ensured full and even ripeness was achieved across red and white varieties alike. Yields were down, but flavours were bold and energetic. Parcel selection in the vineyard enabled timely picking of bright, sweet-fruited berries that are perfect for the soft and fruit driven wine style being crafted. Tasting Note: Lime and lemon juice with yellow garden florals and subtle white spice aromas. The palate is fresh and fine with beautiful light weight fruit showing crisp and gentle fruit sweetness. Vineyard: Sourced from an established vineyard situated at almost the highest point in the Eden Valley, over 600m in altitude and right in the heart of the valley’s finest vineyards. Winemaking: The fruit was hand harvested early in the morning into small bins before rapid transportation to the winery. Following a chill overnight at seven degrees overnight the fruit was whole bunch pressed. Only the finest free run, less than five hundred litres per tonne was used. The fermentation was very cool, at around twelve degrees, and allowed to ferment to bone dry. The absence of the influence of solids is crucial to the purity of the style. Vintage 2020: It will be remembered for high quality across the Barossa in 2020 but yields were down. This was in part due to temperamental spring weather and a hot, dry summer. Altough the yields were affected by the heatwave of December and January, prudent growers managed this well with careful irrigation and maintaining soil moisture. The resulting fruit, (though less of it) was concentrated and exceptional. Tasting Note: Typically pale with green edges.The nose is redolent of the Eden Valley fresh with floral blossom and citrus aromas along with hints of just-cut green apple.The palate is light with impressively vibrant flfloral and citrus flavours defined by mineral and lime acidity before an impressively long finish. This wine has an intensity, length and cellaring potential that is second to none. Awesome accompaniment for pan-fried snapper fillets. Winemaking: The fruit was hand harvested early in the morning into small bins before rapid transportation to the winery. Following a chill overnight at seven degrees overnight the fruit was whole bunch pressed. The fermentation was very cool, at around twelve degrees, and allowed to ferment to bone dry. The absence of the influence of solids is crucial to the purity of the style. Vintage 2023: Eden Valley through late winter and spring was dry and particularly warm but the growing season turned cooler and had a few light, but lengthy rain events. The Riesling grape and resultant wines are loaded with flavour and retained natural acidity brilliantly for the classic Eden floral and racy style. Tasting Note: Pale in colour with the faintest straw hue. The nose is very fresh with subtle floral notes overlaying classic lemon and lime flavours. The palate is elegant and pure, showing distinct regionality with a core of delicate citrus flavours and beautiful acidity. Pair with barbecued white fish.
