The ancient soils and moderate climate create rich and full bodied wines that are incredibly satisfying. Few that experience the food and wine or the beautiful landscape could argue that it is not better a bleeding heart than none at all. Vineyards: Sourced from established vineyards in the Adelaide Hills and the Lower Murray. The sheltered aspect and cold Autumn nights of the Adelaide Hills combine to ensure excellent aromatics and the retention of natural acidity in the elegant fruit harvested. Lower Murray component delivers impressive intensity of flavour and length. Winemaking: Fruit is harvest during the early morning hours to retain freshness before a fast and precise vinification in stainless steel with minimal oxygen contact to maximise fruit expression and aromatics. A cool fermentation (15 to 18 degrees) is undertaken in stainless steel tanks before maturation on lees for four months to build depth and texture with malolactic fermentation prevented. Vintage 2022: 2022 will probably be remembered as wet in most parts of Australia. However, in inland vineyards the rain did not hinder, rather it helped vines stay healthy and created favourable conditions for a modest and favourable crop across much of the country. Overall, quality was up but yields were down. Tasting Note: There’s a reason these two varieties make great stablemates. They complement each other perfectly. Aromatic nose of citrus, fresh herbs with a passionfruit lift that is fruit forward. The palate displays fruit flavours of lemon and guava that ensure a good length and cleansing acidity. Vineyards: The moderate, dry climate with very low rainfall during autumn and fertile soils is perfect suited to Organic Viticulture. The well established vines (up to thirty years of age) are planted widely apart for airflow to minimise disease pressure and minimal drip irrigation ensures low yielding fruit with rich flavours and varietal expressiveness Winemaking: Fruit is harvested during the early morning hours to retain freshness and partially whole bunch pressed. A fast and precise vinification in stainless steel with minimal oxygen contact maximises fruit expression and aromatics. A cool fermentation (15 to 18 degrees) is undertaken in stainless steel tanks before a short rest on lees prior to bottling. 2023 Vintage: Spring was cooler than usual and with more rain events bringing soil moisture levels up. Summer likewise was cool yet with enough sunny days to enable beautiful albeit slower ripening. This made for a later vintage than prior years, but the resultant fruit quality is very, very good.

Region: Marlborough | Awatere Valley Grape Variety: 100% Sauvignon Blanc Winemaker: Corey Ryan and Mike Farrugia Alcohol: 13.5% Summary: Red Hut is a collaboration between longtime friends and wine professionals Corey Ryan and Mike Farrugia, inspired by New Zealand’s iconic backcountry huts that offer shelter and connection. Drawing on deep industry ties, they source small parcels from standout subregions to craft contemporary wines with authenticity and character wines that capture the real New Zealand, both in the glass and in the heart. Winemaking: After harvest, the fruit was fully destemmed and chilled to 6°C before being gently pressed into stainless steel tanks. A neutral yeast strain was used for fermentation at 12–15°C, with semi-solids included to enhance texture. Once dry, the wine matured on lees for two months with regular stirring to build mouthfeel. It was then blended, naturally stabilised, and bottled without further additives. Vintage 2025: A cooler January gave way to warm, dry weather leading into harvest, resulting in clean fruit and strong flavour development. Cool autumn nights preserved the natural acidity that defines classic Marlborough Sauvignon Blanc. Larger yields extended ripening, allowing for ripe flavours at lower sugar levels. Notably, fruit from the Awatere Valley stood out for its vibrancy and purity, delivering Sauvignon Blancs with exceptional intensity and expression.
