The ancient soils and moderate climate create rich and full bodied wines that are incredibly satisfying. Few that experience the lifestyle of food and wine or the beautiful landscape could argue that it is not better a bleeding heart than none at all. Vineyards: Sourced from a combination of established, dry-grown vineyards in central South Australia and low-yielding McLaren Vale vineyards. Wines are made and matured by Jim Zerella in McLaren Vale. The combination of two regions delivers well-balanced wines with excellent intensity of flavour whilst maintaining elegance and versatility as a food match. Winemaking: Fruit is chilled before de-stemming and a cold soak for three days. Each parcel is fermented separately with the McLaren Vale Shiraz fermented in small open two tonne vessels before maturation in two to four year old oak barrels for six months. Vintage 2021: If 2020 was all about the heat, then 2021 will be remembered as the wet season. In many parts of Australia, t was unseasonably wet in winter but not at critical times to do damage nor impact the resultant ripeness of the grapes. Thick gnarled old vines produce tiny berries of incredible intensity that is harnessed by careful winemaking and partial maturation in large seasoned oak barrels to deliver wonderfully approachable, opulent and mouth-coating flavours. Winemaking: Sourced from two vineyards that were planted with one on black and the other on red soils of the famed Coonawarra. The wine spent lesser time on skins that usual and following a cool and uneventful primary fermentation the wine was pressed off into a combination of stainless steel and second-use French oak for maturation where it was held for a period of 10 months prior to blending and bottling. Vintage 2022: A cool season in Coonawarra saw good yields enjoy extended ripening through mild autumn days and cool nights. This was one of the best vintages for the region and the reds were outstanding performers. Tasting Note: Bold and rich, featuring smooth silky tannins. Each wine is sourced from slow-ripening cool climate vineyards in the Limestone Coast of South Australia and partially matured in French Oak before final blending and bottling by Corey Ryan. Vineyards: Sourced from established vineyards in the coastal Mount Benson district of the limestone coast. The sheltered aspect and consistent temperatures combine to ensure the retention of natural acidity in the elegant fruit harvested whilst promoting long, slow flavour development. Winemaking: Partially hand harvested before de-stemming primarily in closed fermenters with pump overs with a portion of open fermenters. All components blended post fermentation before two thirds were matured in stainless steel and one third was matured in French oak for nine months months before bottling with minimal fining, filtration and sulphur addition. Whilst the vintage was indeed later than usual, there were some really beautiful parcels of fruit that benefited from being grown in sites where the slower ripening simply enabled flavour ripeness to be achieved with character & balance. Winemaking: Sourced from a single site vineyard in McLaren Vale that is both organic and biodynamic. Picked in the cool of the morning to retain freshness, the fruit is de-stemming and fermented in stainless steel tank. The wine then spent time in used large format French and American oak barrels to build structure whilst softening the palate and develop flavour complexity without overt extraction of oak characters.
Vintage 2022: A La Nina season brought much welcomed rain over the winter months and continued in providing a mild spring and summer. The cooler than average weather during harvest resulted in a longer ripening period and facilitated an outstanding flavour and tannin balance and wines with balanced natural acidity. The Take it to the Grave Cabernet Sauvignon attempts the ultimate challenge of achieving both true varietal Cabernet character and approachability. Winemaking: The fruit is partially hand-harvested before de-stemming and cool fermentation in small two tonne open fermenters with regular hand plunging. Matured in seasoned French oak (20% new French) for six months before bottling with minimal filtration and sulphur addition. Vintage 2021: An exceptional vintage with ideal growing conditions and outstanding quality fruit! A later start to the vintage due to a mild summer facilitating a longer ripening period and a lovely balance in red wines. Dry conditions through summer resulted in small berries and thick skins in reds. Intense aromatics and bold flavours are a characteristic of the 2021 Coonawarra vintage. The range includes a ladder of old vine Barossa Shiraz, complex and thought provoking blends and alternate varietals that may be the future of the valley. Vineyard: Sourced from a single, low yielding twenty five year old vineyard in the Angaston Foothills, right on the boundary road between Barossa Valley and Eden Valley. Sheltered by the Angaston hills, the vines are cooled in the afternoons because of shadows from hills and cool evenings as tucked into a gulley, perfect for slow ripening Cabernet Sauvignon.. Winemaking: Hand Picked and fully destemmed (no whole bunch) before a short cold soak of three to four days. The fruit was allowed to reach ambient temperature and begin fermentation naturally. A slow cool fermentation at twenty five to twenty seven degrees in one tonne open fermenters on skins for 20 days before being pressed off to hogshead French barrels. 45% New French Hogshead barrels, matured without racking for 18 months before being blended, bottled without finings or filtration. 2020 Vintage: It will be remembered for high quality across the Barossa in 2020 but yields were down. This was in part due to temperamental spring weather and a hot, dry summer. Altough the yields were affected by the heatwave of December and January, prudent growers managed this well with careful irrigation and maintaining soil moisture. The resulting fruit, (though less of it) was concentrated and exceptional. Tasting Note: Dark fruited aromas with fresh new leather, dark clove and black olive tapenade in support. The palate is dark, rich and layered with sweet black fruit flavours, garden herbs, rose petal and toast.
