Pack Size: 24 x 250ml Can Pack Summary: The Elephant in the Room wines are proudly large in scale and expansive in flavour. Ignoring fashion and braving the scorn “wine thought police” Elephant in the Room was created to give consumers exactly what they want – full bodied and mouth-filling wines that deliver maximum pleasure. Each wine is sourced from slow-ripening cool climate vineyards in the Limestone Coast of South Australia and partially matured in French Oak before final blending and bottling by Corey Ryan. Vineyards: Sourced from established vineyards in the coastal Robe district of the limestone coast. The sheltered aspect and consistent temperatures combine to ensure the retention of natural acidity in the elegant fruit harvested. Winemaking: Picked partially by hand. The majority of the blend was vinified in stainless steel with high solids and oxidative handling with fifteen barrel fermented with lees stirring. About forty percent was aged in medium toast two and three year old French oak barriques for six months to add complexity before full malolactic fermentation. 2020 Vintage: An early spring frost event impacted some vineyards, lowering volumes but in general the Limestone Coast had a relatively successful vintage in 2020. The naturally cooler vineyards picked later and benfitted from the conditions moderating as well as a well-timed rain event, re-vitalising the vineyards prior to vintage. Key growers reported good yields of well-balanced fruit with great intensity of flavour. Tasting Note: Pale yellow in colour with an aromatic nose of stone fruit and white peach, struck match and notes of creamy oak. The mouthfeel here is full and rich whilst the fresh stone fruit character and integrated oak delivers lovely flavours and a creaminess to the finish. This is a seamless and easy to like Chardonnay with ripe flavours, freshness and a lasting finish. Pair it with roast chicken and a cauliflower puree. Winemaking: Partially hand before de-stemming and fermentation in a combination of two tonne open fermenters with ten percent whole bunch and twice daily hand plunging and larger closed fermenters with pump overs., All components blended post fermentation before three quarters were matured in stainless steel and one quarter was matured in French oak for four months before bottling with minimal fining, filtration and sulphur addition. Vintage 2020: 2020 had its challenges with a dry start and only a small portion of rain and with much of the country suffering drought conditions. The warm dry spell continued in December with some extreme hot temperature days recorded. Thankfully due to one of the coolest January’s on record the vines were able to re-address the balance. It was a late ripening year and yields were down but despite the challenges it will be another excellent vintage across South Australia. Tasting Note: Medium red in colour with vibrant aromas of dark plums,cherry and hints of forest floor. The palate is fruit-driven with a core of supple red berry and cherry flavours highlighted by a spicy complexity. Bright acidity and fine tannins provide definition to the long finish. More about Wine In A Can Find a stockist Region: 100% Langhorne Creek Summary: Take it to the Grave is a joint venture between Nicholas Crampton and South Australian winemaker Corey Ryan created to deliver interesting and rewarding wines whilst challenging a few established rules and preconceptions. The Take it to the Grave Shiraz takes on the mysteries and individual personalities of old-vine vineyards. Vineyards: Sourced from a selection of mature, dry-grown vineyards in Langhorne Creek managed by Jim Zerella delivering intensity, length and structure. Winemaking: The fruit is partially hand-harvested before de-stemming and cool fermentation in small two tonne open fermenters with regular hand plunging. Matured in seasoned French oak (20% new French) for six months before bottling with minimal filtration and sulphur addition. 2020 Vintage: 2020 had its challenges with a dry start and only a small portion of rain and with much of the country suffering drought conditions. The warm dry spell continued in December with some extreme hot temperature days recorded. It was a late ripening year and yields were down but despite the challenges it will be another excellent vintage across South Australia. Tasting Note: In the glass it’s coloured purple with a dense and dark body. A generous and very aromatic Shiraz showing purple berry fruits, dark chocolate and integrated spices.
