Bleeding Heart Cabernet Sauvignon (12pk)
More about Bleeding Heart Find a stockist Grape Variety: 92% Cabernet Sauvignon, 8% Shiraz Summary: Bleeding Heart Wine was born from a shared passion in the wines and vineyards of South Australia. The ancient soils and moderate climate create rich and full bodied wines that are incredibly satisfying. Few that experience the lifestyle of food and wine or the beautiful landscape could argue that it is not better a bleeding heart than none at all. Vineyards: Sourced from a combination of established, dry-grown vineyards in central South Australia and low-yielding McLaren Vale vineyards. Wines are made and matured by Jim Zerella in McLaren Vale. The combination of two regions delivers well-balanced wines with excellent intensity of flavour whilst maintaining elegance and versatility as a food match. Winemaking: Fruit is chilled before de-stemming and a cold soak for three days. Each parcel is fermented separately with the McLaren Vale Shiraz fermented in small open two tonne vessels before maturation in two to four year old oak barrels for six months. Vintage 2021: If 2020 was all about the heat, then 2021 will be remembered as the wet season. In many parts of Australia, t was unseasonably wet in winter but not at critical times to do damage nor impact the resultant ripeness of the grapes. A cool and dry summer meant even ripening was achieved between dry and rainy spells and the ensuing fruit quality was excellent and for once yields were up making for a bumper harvest in 2021. Tasting Note: Classic Cabernet nose exhibiting berry fruit intensity underpinned by toasty oak. An impressive mouthful, the palate is full of dark berries and ripe plums before an impresse

Bleeding Heart Chardonnay (12pk)
More about Bleeding Heart Find a stockist Grape Variety: Chardonnay Summary: Bleeding Heart Wine was borne from a shared passion in the wines and vineyards of Australia. The ancient soils and moderate climate create rich and full bodied wines that are incredibly satisfying. Few that experience the lifestyle of food and wine could argue that it is not better a bleeding heart than none at all. Winemaking: Fruit is harvested during the early morning hours to retain freshness and partially whole bunch pressed. The fruit is kept separate before a fast and precise vinification in stainless steel with minimal oxygen contact, maximising fruit expression and aromatics. A cool fermentation (15 to 18 degrees) is undertaken in stainless steel tanks before maturation on lees for four months. A portion of the Adelaide Hills fruit is aged in two and three year old French oak to increase complexity and mouthfeel. Vintage 2021: Some early rainfall some vineyards, lowering volumes but in generalthe Limestone Coast had a relatively successful vintage in 2021. The naturally cooler vineyards picked later and benefitted from the conditions moderating as well as a well-timed rain event re-vitalising the vineyards prior to vintage. There were good yields of well-balanced fruit with great intensity of flavour. Tasting Note: Pale yellow in colour with green hints. The nose is unadulterated Chardonnay – classically expressive of stone fruit, lemon and cut apple. The palate is elegant and fresh, highlighting citrus and stone fruits before building to a soft and round mid palate, balanced by a citrus minerality. Pair with a classic chicken schnitzel. Bleeding Heart Sauvignon Blanc (12pk)
More about Bleeding Heart Find a stockist Grape Variety: Semillon 70% Sauvignon Blanc 30% Summary: Bleeding Heart Wine was born from a shared passion in the wines and vineyards of South Australia. The ancient soils and moderate climate create rich and full bodied wines that are incredibly satisfying. Few that experience the food and wine or the beautiful landscape could argue that it is not better a bleeding heart than none at all. Vineyards: Sourced from established vineyards in the Adelaide Hills and the Lower Murray. The sheltered aspect and cold Autumn nights of the Adelaide Hills combine to ensure excellent aromatics and the retention of natural acidity in the elegant fruit harvested. Lower Murray component delivers impressive intensity of flavour and length. Winemaking: Fruit is harvest during the early morning hours to retain freshness before a fast and precise vinification in stainless steel with minimal oxygen contact to maximise fruit expression and aromatics. A cool fermentation (15 to 18 degrees) is undertaken in stainless steel tanks before maturation on lees for four months to build depth and texture with malolactic fermentation prevented. Vintage 2022: 2022 will probably be remembered as wet in most parts of Australia. However, in inland vineyards the rain did not hinder, rather it helped vines stay healthy and created favourable conditions for a modest and favourable crop across much of the country. Overall, quality was up but yields were down. Tasting Note: There’s a reason these two varieties make great stablemates. They complement each other perfectly. Aromatic nose of citrus, fresh herbs with a passionfruit lift that is fruit forward. The palate displays fruit flavours of lemon and guava that ensure a good length and cleansing acidity. Pair with pan fried scallops with salsa Verde. The below information is available for stockists of this product.
