Summary: The Elephant in the Room wines are proudly large in scale and expansive in flavour. Created to deliver full bodied and mouth-filling wines, Elephant in the Room gives consumers what they want- quality, flavour and something to talk about. Each wine is sourced from slow-ripening cool climate vineyards and partially matured in French Oak before final blending and bottling by Corey Ryan. Vineyards: Sourced from established vineyards in the coastal Robe district of the limestone coast. The sheltered aspect and consistent temperatures combine to ensure the retention of natural acidity in the elegant fruit harvested. Winemaking: Picked partially by hand. The majority of the blend was vinified in stainless steel with high solids and oxidative handling with fifteen barrel fermented with lees stirring. About forty percent was aged in medium toast two and three year old French oak barriques for six months to add complexity before full malolactic fermentation. Vintage 2023: The winter and spring prior to the 2023 vintage was generally a little wetter and cooler than what is usual, delaying the start of vintage and meaning some extra care was required through the growing period. Whilst the vintage was indeed later than usual, there were some really beautiful parcels of fruit that benefited from being grown in sites where the slower ripening simply enabled flavour ripeness to be achieved with character & balance. Tasting Note: This wine is more fuller, richer and rounded than the standard Elephant Chardonnay. It has more oak influence, buttery characters and more complexity. In many parts of Australia, it was unseasonably wet in Winter but not at critical times to do damage nor impact the resultant ripeness of the grapes. A cool and dry summer meant even ripening was achieved between dry and rainy spells and the ensuring fruit quality was excellent and for once yields were up making for a bumper harvest in 2021. Tasting Note: Typical Cabernet nose of blackcurrants with notes of earthy tobacco. The palate is fruit-driven and vibrant with a juicy core of supple berried fruits, dark chocolate and cassis building to a ripe and mouth-filling back palate. Vintage 2021: Early rainfall in some vineyards saw a lowering of volumes but in general the Limestone Coast had a relatively successful vintage in 2021. The naturally cooler vineyards were picked later and benefitted from the conditions moderating. A well-timed rain event prior to vintage re-vitalised the vineyards and saw some good yields of well-balanced fruit with great intensity of flavour. Tasting Note: Pale yellow in colour with an aromatic nose of stone fruit and white peach, struck match and notes of creamy vanillin oak. The mouthfeel here is fulsome and rich whilst the fresh stone fruit character and integrated oak delivers enormous flavour and a creaminess to the finish. Each wine is sourced from premium slow-ripening cool climate vineyards across South Australia by Corey Ryan. Winemaking: Picked partially by hand. The majority of the blend was vinified in stainless steel with high solids and oxidative handling with remainder of the blend being barrel fermented with lees stirring. About forty percent was aged in old French oak barriques for six months to add complexity before full malolactic fermentation Vintage 2022: A wet spring provided adequate soil moisture going in to the growing season. Windy and rainy conditions during spring resulted in lower than usual crops. The summer months were mild facilitating a long ripening period and exceptional flavour and acid balance in white wines. Tasting Note: Definitely not short on flavour this chardonnay is a homage to the giant wines of yesteryear that gave Australia such a strong reputation. Aged in small oak barrels with a monster mouthfeel it's a Chardonnay that is big and bold with a decadent nutty oak and a moreish mouthfeel. Pair with roast pork and dauphinoise potatoes. Each wine is sourced from premium slow-ripening cool climate vineyards across South Australia by Corey Ryan. Vineyards: Sourced from established vineyards in the Adelaide Hills. The sheltered aspect and consistent temperatures combine to ansure the retention of natural acidity in the elegant fruit harvested. Winemaking: Picked partially by hand. Partially hand before de-stemming and fermentation in a combination of two tonne open fermenters with ten percent whole bunch and twice daily hand plunging and larger closed fermenters with pump overs. All components blended post fermentation before the final wine was in small french French oak barrels for 6 months months before bottling with minimal fining, filtration and sulphur addition. Vintage 2022: A wet vintage across most of Australia in 2022 but the Adelaide Hills faired very well. The climatic conditions were cool to warm with no real heat wave impacts. The season was delayed with a cool, dry summer but was rescued with a long Indian style summer well into Autumn. This resulted in slow ripening and optimum flavour development. Tasting Note: This Super Duper Pinot Noir is a perfect example of what a wine drinker wants and not what the wine police tell us it should be. Aged in small oak barrels, it’s generous and opulent with an unfashionable amount of flavour. Brimming with red berries and savoury nuances with a hint of spicy oak. The sheltered aspect and consistent temperatures combine to ensure the retention of natural acidity in the elegant fruit harvested. Winemaking: The fruit is partially hand-harvested before de-stemming and cool fermentation in small two tonne open fermenters with regular hand plunging. Matured in small seasoned French oak (20% new French) for six months before bottling with minimal filtration and sulphur addition. Vintage 2021: One of the best vintages in the last decade for the Barossa in 2021 with vignerons ecstatic with the quality of the fruit. Good rainfall over winter ensured the soil retained moisture over the early part of the growing season. A warm - but not ridiculously hot - Summer followed with dry conditions ensuring an even ripening all the way up to harvest. A vintage that will be celebrated in the region. Tasting Note: It may be the fashion to pull back on the flavour but there’s no way to control the gargantuan flavour of the Barossa that is expressed in our new splendiferous Shiraz. This is a full throttle taste of what the Barossa is famous for, big fruit flavours and ample body weight with a nicely complex palate. Each wine is sourced from slow-ripening cool climate vineyards in the Limestone Coast of South Australia and partially matured in French Oak before final blending and bottling by Corey Ryan. Vineyards: Sourced from established vineyards in the coastal Robe district of the limestone coast. The sheltered aspect and consistent temperatures combine to ensure the retention of natural acidity in the elegant fruit harvested. Winemaking: Picked partially by hand. The majority of the blend was vinified in stainless steel with high solids and oxidative handling with fifteen barrel fermented with lees stirring. About forty percent was aged in medium toast two and three year old French oak barriques for six months to add complexity before full malolactic fermentation. 2020 Vintage: An early spring frost event impacted some vineyards, lowering volumes but in general the Limestone Coast had a relatively successful vintage in 2020. The naturally cooler vineyards picked later and benfitted from the conditions moderating as well as a well-timed rain event, re-vitalising the vineyards prior to vintage. Key growers reported good yields of well-balanced fruit with great intensity of flavour. Tasting Note: Pale yellow in colour with an aromatic nose of stone fruit and white peach, struck match and notes of creamy oak. The mouthfeel here is full and rich whilst the fresh stone fruit character and integrated oak delivers lovely flavours and a creaminess to the finish. Vintage 2020: 2020 had its challenges with a dry start and only a small portion of rain and with much of the country suffering drought conditions. The warm dry spell continued in December with some extreme hot temperature days recorded. Thankfully due to one of the coolest January’s on record the vines were able to re-address the balance. It was a late ripening year and yields were down but despite the challenges it will be another excellent vintage across South Australia. Tasting Note: Medium red in colour with vibrant aromas of dark plums,cherry and hints of forest floor. The palate is fruit-driven with a core of supple red berry and cherry flavours highlighted by a spicy complexity. Bright acidity and fine tannins provide definition to the long finish.
