More about Le Chat Noir Find a stockist Region: Gers & Aude Valley Sourcing: Fruit from the Gers region, in the centre of southern France provides a core of rich and vibrant fruit with impressive depth whilst the high altitude, cool climate Aude Valley fruit provides high note aromatics and bright, fresh acidity. Winemaking: Totally de-stemmed before a long, cool maceration. Maturation is primarily in stainless steel with roughly one third undergoing carbonic maceration, aiding aromatics and fruit expression. A further third receives six month maturation in French oak for greater complexity. 2020 Vintage: Another consistent vintage for the Aude Valley. Less hot than previous vintages meaning a reprieve for vignerons. Mild temperatures and good rainfall in Spring ensured steady bud burst. The berries achieved full ripeness, have fine acidities and fragrant flavours. 2020 was an excellent vintage. Tasting Note: Dark red in colour with a lifted and expressive nose, bursting with a seductive perfume of ripe red fruits and exotic berries. The palate is soft and seductive with a core of sweetly fruited dark cherry flavours balanced by fresh acidity. Earthy notes add complexity before fine tannins provide definition to the finish. Try it with duck breast and baby lentils.

More about Le Chat Noir Find a stockist Region: Gers & Aude Valley Summary: Fruit from the Gers region, in the centre of southern France provides a core of vibrant and expressive fruit with impressive depth whilst the high altitude, cool climate Aude Valley fruit provides lifted aromatics, savoury complexity and bright, fresh acidity. Winemaking: Completely whole bunch fermented with a short maceration (a few hours) sufficient to impart colour and texture. Following a soft pressing, the juice is given a cool fermentation in stainless steel and allowed to ferment to almost complete dryness. Maturation on lees in stainless steel adds texture and malo-lactic fermentation is prevented to ensure vibrancy. Vintage 2020: 2020 growing season begun with generous autumn rains and a mild December. A warm February got things moving pretty quick and an early budburst was experienced. A cooler spring slowed things down and then a dry summer provided excellent conditions for harvesting. 2022 was an excellent vintage with wines of elegance, great aromatic intensity and freshness. Tasting Note: Pale pink in colour, sitting well within the classic Provence “pale and dry” spectrum. The nose is lifted and expressive with perfumed aromas of pink florals, red berries, subtle herb and minerals. The palate is fresh, vibrant and fruitful with savoury notes delivering a fine, even, long finish of strawberries, rose petal and fresh herbs. Perfect chilled with a variety of dishes.
