Hand-crafted thoughtfully using premium organically farmed fruit and minimal winemaking intervention resulting in vibrant, full flavoured, vegan friendly wines. Winemaking: The grapes are softly pressed, then left in contact with the skins for 12 hours at 10C for extraction of the aromas. Fermentation takes place at 14-16C, after that the wine is left on its lees at a constant temperature. Prior to bottling the wine goes through a very gentle filtration. Vintage 2021: The 2021 vintage although low in crops the quality level is the highest growers have seen in a long time! There is great excitement building around the 2021 vintage. Low level of crops due to some small hail event early in the season, the rest of the season was dry with no disease pressure resulting in beautifully ripe and clean wines. Tasting Note: Slightly opaque with yellow hues and a captivating nose of citrus, stonefruits and toasted almonds. The palate delivers a rounded mouthfeel of bright peach fruit with secondary nutty notes and minerality providing length on the finish. Fine but persistent acidity draws out the long finish. Hand-crafted thoughtfully using premium organically farmed fruit and minimal winemaking intervention resulting in vibrant, full flavoured, vegan friendly wines. Winemaking: All hand-picked and hand-sorted before whole bunch pressing to 100% stainless steel for fermentation. After an uneventful ferment to dryness the wine spent a short period on lees to build mouth-feel and flavour complexity before being bottled. Vineyards: Sourced from organically grown vineyards in the famed volcanic region of Sicily. The combination of altitude, volcanic soils and mature vines create intensely flavoured but elegant wines. Vintage 2021: 2021 was declared as a consistent vintage, although there was significant rainfall in the early part of the growing season leading to significantly lower yields, there was no doubting the quality. Tasting Note: Varietal Pinot Grigio that is fresh and crisp with bags of flavour. On the nose it shows cut green pear and citrus. A short time on lees has softened the wine and delivered a more textural mouthfeel whilst maintaining the acidity Best consumed young, this wine will partner well with fresh seafood dishes like spaghetti ale marinara. Enabling them to showcase classic wine styles delivered from the most sought-after wine regions. Hand-crafted thoughtfully using premium organically farmed fruit and minimal winemaking intervention resulting in vibrant, full flavoured, vegan friendly wines. Winemaking: Fruit is picked and de-stemmed then put in open fermenters. A small part of the blend is matured on oak. Vineyards: From dry grown organic vineyards in the Gard region situated on the Rhone river and part of Languedoc Rousillon. The vines sit on a mix of clay and limestone soils. During summer it remains warm and sunny yet cool at night due to the proximity of the river and the sea. Vintage 2019: Drought has been a problem for the region in recent years and 2019 was not spared from more challenging drought conditions. A cold, dry Spring meant the vines were not in optimum flowering conditions then an intense Summer heat hampered further development. Thankfully it cooled prior to harvest. Although a later harvest, the fruit finally ripened and the results were more concentrated with defined tannin structure. Tasting Note: Light red in colour with a ripe nose of strawberries and a hint of spice. A smooth mouthfeel with good length and clean acidity so typical of the variety. Hand-crafted thoughtfully using premium organically farmed fruit and minimal winemaking intervention resulting in vibrant, full flavoured, vegan Friendly wines. Love not War Sangiovese is crafted by winemaker Soledad Adriasola Lang. Soledad has strongly voiced her concerns of the impact of climate change and advocated the need to support the future of organic viticulture combined with higher altitude plantings. Winemaking: Organic grapes were hand-picked and hand-sorted before whole bunch pressing to old oak. 2021 Vintage: 2021 was declared as a consistent vintage, although there was significant rainfall in the early part of the growing season leading to significantly lower yields, there was no doubting the quality. Tasting Note: A deliciously easy-drinking Sangiovese. On the nose it shows dark cherry fruit and savoury herb nuances with a touch of amaro. The palate is medium-bodied and fresh with dark fruit and soft earthy tannins. It finishes dry with clean acidity. It would pair well with a Lasagne. Region: Australia Winemaker: Corey Ryan Closure: Screwcap Alcohol: 14.5% Summary: The Love not War Organic wines are sourced from fully certified Organic vineyards and made using minimal additions. The wines are Organic, Vegan friendly and made to EU guidelines for minimal preservatives (less than 30ppm Free Sulphur). A new benchmark in affordable Organic Wines. Winemaking: Sourced primarily from a mature, dry-grown vineyards in South Australia. The fruit is hand-harvested and sorted before de-stemming and cool fermentation in small two tonne open fermenters with regular hand plunging. Matured in seasoned French oak (30% new French) for ten months before bottling with minimal filtration and sulphur addition. 2022 Vintage: A wet spring provided adequate soil moisture going in to the growing season. Windy and rainy conditions during spring resulted in lower than usual crops. The summer months were mild facilitating a long ripening period and exceptional flavour and acid balance in white wines. Tasting Note: A bright, lifted nose of plush red fruits, chocolate and subtle spices. The palate is rich with flavours of cherry, blackberry and firm tannins making it perfect with a chargrilled steak.

Summary: Castilla La Mancha: The vast, high and dry plains of Castilla la Mancha comprise over 50% of Spain’s vineyards. The ancient soils and high altitude ensures the richly flavoured fruit maintains structure and tannin. Vineyards planted on the slopes of mountain ranges in the north and north east add a degree of elegance to the wines. Winemaking: Totally de-stemmed with a short cold soak before a long, cool fermentation with daily pump - overs to achieve optimum fruit and colour. The core of the blend was aged in stainless steel before six months maturation in seasoned French and American oak. Vintage 2020: Vintage 2020 in Castilla La Mancha has been described as the best vintage of the past 10 years! The greatest challenge throughout the season was finding enough people to harvest due to the challenges that were faced with COVID 19. Ideal conditions throughout the growing period facilitated perfectly ripe and perfumed reds with balanced tannins. Tasting Note: A lovely rendition of Tempranillo, bold purple fruits and fragrant floral aromatics. The palate is bright and expressive with a burst of mouth-filling ripe purple and red berries. Textbook varietal flavours of cherry cola and spice flood the palate before smooth tannins and subtle oak provide definition to the impressively long finish.
