Wild yeast fermented, no additions, vegan Friendly, preservative free, unfined and unfiltered nothing but fermented grapes at their finest. Winemaking: A less is more regime in the vineyard and the winery has resulted in a fresher more uncompromising wine stylistically. The 2022 is crushed and hard pressed, then wild fermented on oak with full solids. Stirred fortnightly until bottling in July. Vintage 2023: A cooler and wetter spring slowed the start of vintage in 2023. Coolness was a signature of the year putting some pressure on many vineyards and yields. The individual site for Wild Folk wines here in the Yarra valley needed to take precautions and act decisively during the growing period to ensure disease pressure was well-managed and berries could achieve full flavour and phenolic ripeness. The resultant wines from these very best sites are bright and flavour-filled & will drink superbly in their youth. Tasting Note: Yarra Chardonnay goes natural, made with premium fruit and integrated older oak. Vibrant nose with citrus, apple, and biscuit notes complemented by subtle cashew and grilled nuts. A creamy palate showing good length and lovely line with crisp acidity. A great expression of modern Yarra Valley Chardonnay. Pair with a classic roast chicken. The cooler than average weather during harvest resulted in a longer ripening period and facilitated an outstanding flavour and tannin balance and wines with balanced natural acidity. Tasting Note: A traditional blend with a modern natural twist from the McLaren Vale. Bright raspberry liquorice, red currant, and floral aromatics. Palate vibrant with black cherry and a touch of spice, smooth tannins provide texture and depth and balanced acidity carries the length. A youthful expression of a prevalent McLaren Vale blend with loads fruit intensity and complexity, made using natural philosophies with no additions and no sulphur. The season was delayed with a cool, dry summer but was rescued with a long Indian style summer well into Autumn. This resulted in slow ripening and optimum flavour development. Sugar, tannin, and flavours all tracked together in development resulting in high quality wines being produced. Tasting Note: McLaren Vale and Sicily share many of the same climatic similarities which is why this Italian variety thrives in the region. This is instantly drinkable with a soft, approachable roundness to the palate. There’s red berry fruit complemented by earthy savoury notes and a gentle grip on the finish. The wines in the best sites did develop to full flavour ripeness and show a real brightness and array of beautifully complexing flavours often not seen in the much warmer years. Tasting Note: This is such an honest expression of Shiraz from the Barossa exhibiting both freshness and flavour. It combines dark berries, spice and a soft, plush generosity of fruit flavour and fine tannins that make for a very satisfying glass of wine.
