Winemaking: Harvesting in the cool of night, the fruit was cold soaked for two days prior to undergoing primary fermentation for another ten days prior to pressing. The wine underwent malolactic fermentation in clay amphora and some older puncheon. The shape of the clay amphora keeps the wine in constant movement and the porosity of clay between steel and oak allows gentle oxygen contact, building richness and texture, allowing the ample tannins of the wine to resolve while still showing generous fruit the length of the palate. The wine was held for an additional nine months prior to bottling. There was a small addition of sulphur prior to bottling.

Tasting Note: This Shiraz has lifted and generous aromas of blackberry, violets, vanilla bean and all-kinds of spice. The palate is soft and mouth-filling with more dark berry fruits and peppery spices. The tannins are soft and beautifully integrated and due to the higher, cooler growing in Orange, the natural acidity in the wine ensures it finishes long and fresh.  A great match with many red meat cuisines.

Vineyards: Sourced from a small vineyard in Canowindra, North of Cowra on the Belubla River. The vineyards are managed organically with minimal inputs and a sustainable focus. 

Winemaking: Made with a hands off approach. This Italian variety is known for its thick skins and bright red fruits producing savoury and textural medium bodied wines. Montepulciano fruit was picked and de-stemmed, fermented with wild yeast and left on skins for 10 days prior to pressing. Bottled early with no additions or preservatives. Vegan friendly, unfined and unfiltered 

Vintage 2022: A La Nina season brought much welcomed rain over the winter months and continued in providing a mild spring and summer. The cooler than average weather during harvest resulted in a longer ripening period and facilitated an outstanding flavour and tannin balance. Producing red wines with elegance and balanced natural acidity. 

Tasting Note: Lifted, vibrant and expressive with black cherry and plum aromas overlaid with light herbal and subtle gamey notes. The palate is fresh and crunchy with red fruits, smoky spice and a touch of balsamic twang before fine tannins and lively acidity ensure a bright and clean finish.

Winemaking: Made in the Traditional ‘Pet Nat’ way - Chardonnay juice was put into bottle with noadditions to ferment and produce a naturally sparkling style full of refreshment.

Vintage 2023: The wider region was looking at being three to four weeks behind at vintage time due to cooler weather, but sunny periods throughout February and March that were much drier than December and January resulted in very good quality grapes for both red and white across the board.

Tasting Note: This is a vibrant and fruit driven style full of energy and refreshment. There is a great juxtaposition between fresh and bruised apples, hints of yeasty complexity and a dry finish that is full of vivacity. A perfect picnic wine, serve well chilled and enjoy with good company.

Vineyards: Sourced from a 20-year-old organic vineyard in Canowindra, NSW.

Winemaking: Classic hands off winemaking has resulted a Pinot Gris in the Orange style. Once pressed, a third of the organic Pinot Gris juice sat on skins for 7 days to aid colour and texture. The wine was then de-juiced and fermented with no additions.

Tasting Note: Deeply aromatic with a fine floral drive this wine is imbued with notes of blood orange, musk and other rich, fruit flavours. On the palate it has grip and delicacy with lovely mouth-filling textures complemented by notes of amaro and hints of Campari. Really impressive length of flavour ensures this will be a great food wine and could be paired with a multitude of dishes.
