Summary: Francesco Serafini is an oenologist and is in charge of the winery whilst Antonello Vidotto is the viticulturist managing the estate vineyards. A perfect partnership one might say. The winery and vineyards are located in the Montello Hills of the Veneto. Here the lifted site benefits from cooler nights to accompany the sunny days delivering fresh flavours for their planted varieties of mostly Prosecco but also Cabernet, Pinot Noir, Merlot and Sauvignon Blanc.
Winemaking: Berries are softly whole bunched pressed with cold maceration period following. Traditional white wine vinification followed with a precise fermentation in stainless steel tank with three months maturation to build softness and complexity prior to bottling. This wine did not undergo malolactic fermentation.
Tasting Note: This is moreish Prosecco with lifted citrus and honeycomb aromatics and a vibrant mouth-filling palate. The bead is fine for Prosecco wines and very persistent delivering fresh ripe flavours and a very long finish. This wine is perfect for any occasion and many cuisines.
