Summary: The See, Hear, Speak No Evil Organic wines are sourced from premium Organically farmed vineyards and made using minimal additions. The wines are Organic, Vegan friendly and made to EU guidelines for minimal preservatives (less than 30ppm Free Sulphur. A new benchmark in affordable Organic Wines).

Winemaking: Completely de-stemmed with a short maceration (a few hours) enough to impart colour and texture. Following a soft pressing, the juice is given a cool fermentation in stainless steel and allowed to ferment close to dry. Maturation on lees in stainless steel adds texture and malolactic fermentation is prevented to ensure vibrancy.

2020 Vintage: 2020 had its challenges with a dry start and only a small portion of rain and with much of the country suffering drought conditions. The warm dry spell continued in December with some extreme hot temperature days recorded. Thankfully due to one of the coolest January’s on record the vines were able to re-address the balance. It was a late ripening year and yields were down but despite the challenges it will be another excellent vintage across Australia.

Tasting Note: It’s hard to find organic Pinot Noir that ticks all the boxes especially using minimal preservatives but this new release from our No Evil range is a game changer. Soft and approachable with varietal Pinot notes of cherry/red berry and some earthy characters so typical of this grape. The palate is light to medium bodied with good concrentration, gentle tannin weight and good acidity on the finish. Pair with mushroom rillettes or a truffle infused brie.
