Vineyards: Sourced from a 20-year-old organic vineyard in Canowindra, NSW.

Winemaking: Made in the Traditional ‘Pet Nat’ way - Chardonnay juice was put into bottle with no additions to ferment and produce a naturally sparkling style full of refreshment.

Vintage 2021: It was considered a good vintage in Canowindra in 2021 much to the relief of vignerons. It was wetter than usual which was welcome after a number of drought years in Central NSW. Rain caused a few issues as did hail causing a delay in picking times. Organic growers enjoyed larger yields due to judicious vineyard management with larger bunch weights due to the abundance of rain. The vintage was fast with few delays between varieties being picked.

Tasting Note: This is a vibrant and fruit driven style full of energy and refreshment. There is a great juxtaposition between fresh and bruised apples, hints of yeasty complexity and a dry finish that is full of vivacity. A perfect picnic wine, serve well chilled and enjoy with good company.
