Summary: Once you are in the Labyrinth there is no turning back. It will be the entry into a whole new world. Nothing will quite be the same again. Your perspective will change. You’ll look at the world in a totally different way. Are you ready to enter the Labyrinth?
Pinot Noir: of all the grape varietals the most notorious. The most difficult to grow. The most difficult to make and perhaps the hardest to appreciate. However, once you have entered the Labyrinth world of Pinot Noir there is for many no turning back. Be warned, your world, and wine will never be the same again.
Winemaking: Sourced from a number of vineyards in South Australia across a number of microclimates – providing a good blend of expressive fruit, structure and high note aromatics. Primarily machine picked before vinification in a combination of small and large open fermenters. The majority of the blend is matured in stainless steel with a component aged in new and one-year old French oak.
Vintage 2021: f 2020 was all about the heat, then 2021 will be remembered as the wet season. In many parts of Australia, it was unseasonably wet in winter but not at critical times to do damage nor impact the resultant ripeness of the grapes. A cool and dry summer meant even ripening was achieved between dry and rainy spells and the ensuing fruit quality was excellent and for once yields were up making for a bumper harvest in 2021.
Tasting Note: Lighter in colour with a vibrant Pinot Noir nose of dark plums and cherries. The palate is rich and sumptuous with smooth cherry and vibrant red berried fruit. It combines a beautifully lush mouthfeel complemented by chiseled tannins and soft acidity. Pair with a duck and shitake risotto.
