Summary: The See, Hear, Speak No Evil Organic wines are sourced from fully certified Organic vineyards and made using minimal additions. The wines are Organic, Vegan friendly and made to EU guidelines for minimal preservatives (less than 30ppm Free Sulphur). A new benchmark in affordable Organic Wines.

Winemaking: Sourced from a vineyard at 350m in altitude. Hand picked into small bins and chilled before transportation to the winery, A very fast and precise vinification with a cool fermentation in stainless steel before extended maturation on lees to build texture and complexity. A small amount of Viognier was added for aromatic complexity.

2019 Vintage: the winter of 2018 was very dry at and returned a lower yield than the previous season. However, growers were happy with the quality overall. The growing season was dry but vines enjoyed a steady and even budburst. Although a heat wave struck most of South Australia in January the temperature cooled again to let the vines recover before even ripening prior to vintage.

Tasting Note: Pale in colour with slight green hues. Fresh and delicate nose with restrained floral and trademark gooseberry aromas aiding complexity as well as wet-stone and white apple notes. The palate displays vital lime, citrus and passionfruit flavours underpinned by a fine mineral acid backbone. Nicely restrained and poised version of Sauvignon Blanc that would pair brilliantly with a Goat’s cheese salad.
