Summary: Take it to the Grave is a joint venture between Nicholas Crampton and South Australian winemaker Corey Ryan created to deliver interesting and rewarding wines whilst challenging a few established rules and preconceptions. The Take it to the Grave Cabernet Sauvignon attempts the ultimate challenge of achieving both true Riesling razor like age-worthy structure with breath of flavour and drinkability.
Vineyards: Sourced from mostly older and well-established Riesling vines in the heart of the Clare Valley. Just to the north-west of the township.
Vintage: 2019 a dry winter was followed by good rainfall up until the months of January and February which were warmer and drier than usual.Fruit developed quickly at pace with another hot spell in March ensuring accelerated and even ripening. Yields were solid and quality (for those that got in early), was excellent.
Winemaking: Cool harvested to ensure freshness and vibrancy of the bright fruit flavours. The wine was pressed and the finest of the free-run juice was quickly transferred to stainless steel for fermentation and short maturation prior to bottling to ensure the lovely fruit character is protected.
Tasting Note: Classic Clare aromatics exhibiting a lifted nose of lemon and lime citrus, apple blossom and subtle clove spice with bone dry acidity. A deliciously structured wine in its youth but will also reward with careful cellaring. Perfect with whiting or salt and pepper calamari.
