Vineyards: Sourced from established vineyards in the Padthaway district of the limestone coast. The sheltered aspect and consistent temperatures combine to ensure the retention of natural acidity in the elegant fruit harvested.
Winemaking: Picked partially by hand. The majority of the blend was vinified in stainless steel with high solids and oxidative handling with fifteen barrel fermented with lees stirring.
Vintage 2020: 2020 could best be characterised as small quantities of exceptional fruit. The season began well with good rainfall and luckily the region did not get affected by the bushfires that affected so much of Australia. Whites were picked in March across the region and while yields were down the quality looked fantastic. The wines were free of disease, drought and smoke taint and 2020 will be worth seeking out.
Tasting Note: An opaque colour, almost pale with the varietal richness and freshness that Padthaway can impart. Varietal notes of nashi pear and apple with a slight mineral edge. The palate delivers fresh cut pear with a citrus backbone and fleshy yet firm mouthfeel. Crisp acidity rounds out the package and makes it a perfect match for a crispy pork belly and cauliflower puree.
